Holiday Baking: Yummy Shortbread and Chocolate Recipes

Baking is a wonderful Christmas tradition. I remember my grandmother’s fruit cakes, made every year with care and pride – one dark, one light – and a multitude of delicious cookies!

Today, many of us bake for family and friends, a cookie exchange, or just for fun. It’s a special part of the holiday season.

These recipes below combine two of my favourite things: shortbread and chocolate! There are milk chocolate, dark chocolate and white chocolate versions – whatever you like best (or try all 3!)

WHITE CHOCOLATE SHORTBREAD WITH CRANBERRIES

Makes 4 dozen

Ingredients:

2 cups butter, softened

1 cup sugar

4 cups flour

1 pkg. (6 squares) white chocolate, chopped

1-1/2 cups dried cranberries

PREHEAT oven to 350°F. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add flour; mix well.

STIR in chopped chocolate and cranberries. Drop rounded tablespoons of dough, 2 inches apart, onto ungreased baking sheets. Flatten each ball of dough slightly.

BAKE 10 to 14 minutes or until lightly browned. Cool 5 minutes on baking sheets. Remove to wire racks; cool completely.

CHOCOLATE CHIP SHORTBREAD WITH WALNUTS

Makes 2 dozen

Ingredients:

1-3/4 cups all-purpose flour

1/2 tsp. baking powder

1/4 tsp. salt

1 cup unsalted butter

1/2 cup white sugar

3/4 cup semi-sweet chocolate chips

1/2 cups chopped walnuts

PREHEAT oven to 300°F.

SIFT together the flour, baking powder and salt, set aside. In a medium bowl, cream the butter and sugar together until fluffy. Gradually stir in the dry ingredients, then stir in the walnuts and chocolate chips.

ROLL or scoop dough into walnut sized balls. Place them on unprepared cookie sheets 1 1/2 inches apart. Flatten cookies slightly. Bake for 15 to 20 minutes, until light golden brown. Remove from sheets to cool on racks.

DARK CHOCOLATE SHORTBREAD WITH FLEUR DE SEL

Makes 18 to 36

Ingredients:

1 cup (2 sticks) butter, room temperature

1/2 cup powdered sugar

1-1/2 cups flour

1/2 cup cornstarch

1/4 teaspoon fleur de sel

1/2 cup dark chocolate, cut into small pieces

CREAM the butter and sugar.

MIX in the flour, cornstarch and fleur de sel.

MIX the dry ingredients into the wet ingredients followed by the chocolate.

SHAPE the cookies as you like and place them on a parchment lined baking sheet with an inch of space between them.

PLACE the baking sheet in the fridge and chill for at least 30 minutes.

BAKE in a preheated 350°F oven until they just start to turn a light golden brown, about 8-14 minutes, remove and let cool. (Note: The shortbread will still be rather soft when it is done but it with crisp up as it cools.)

NOTE: Most shortbread is fine at room temperature in an airtight container for a week.  It can also be frozen for up to a month.

It’s a Wrap! How to Add Beautiful Finishing Touches to Your Holiday Gifts…

Do you feel as I do, that how a gift is wrapped is as meaningful as what’s inside? When I receive a gift that’s wrapped with care, style and originality, it makes me smile. The giver took the time for presentation – and that’s uncommonly thoughtful in today’s “get it done” world.

I’ve pulled together a few suggestions to add the “wow factor” to your gift wrapping this holiday season. They’re easy, inexpensive and many involve recycling/reusing – and yes, may even be fun!

A Little Bit Country. A rustic theme is beautiful (and so affordable)! Simple brown wrap is timeless, especially when paired with yarn, twine or string. Enhance the theme further with real greenery, pine cones, winter berries or twigs. Perfect!

Don’t Discard the Cards! Last year’s holiday cards can become this year’s gift tags! Sometimes all it takes is a hole punch and some ribbon or string. Try using pinking shears to cut out a particular graphic. Or be even more creative by cutting out the recipient’s initial. Use the back of the tag for your personal message.

Magical Mittens. This is so easy! Cut out a mitten shape from construction paper and decorate it. Add ribbon, lace, glue on buttons – and use it as a gift tag. So bright and pretty!

Monogram it. Cut out simple shapes like a Christmas tree, stocking or ornament bulb from felt. Then cut out and glue on the recipient’s initial in a contrasting colour. What a personal touch to a gift! Another “initial” idea is to use a basic tag in white or brown (at office stores) and stencil on the recipient’s initial in bright red or green. 

Button Up. Buttons are beautiful and when you buy in bulk, they are inexpensive too! Glue buttons to the ribbon on your package, or use a big bright button in place of a bow. Or even make a gift tag by grouping together tiny buttons on cardboard or bristle board to make a wreath shape.

Win, Lose or Draw. This is a winner on so many levels! Give your children big sheets of paper and ask them to draw or paint colourful holiday pictures. The finished artwork is your wrapping paper. Cheap, fun for the kids and looks so cute! Add ribbons, stars or whatever else suits the look!

Make it Personal. There are lots of ways to customize that are simply and inexpensive! Add sheet music to your gift wrapping for the music lover, a copy of a page from a favourite book, a special poem or favourite holiday flower… so many options! Keep the background wrap plain.

Sparkle and Shine. Start with plain wrap, such as kraft  paper, and add some sparkle by including a shiny tree ornament or jingle bells to your gift. Try using sequins mixed with yarn or raffia for your ribbon. 

Bright Idea. Traditional tree light bulbs can make a beautiful gift decoration. Arrange in the shape of a star as a centrepiece on your gift – glue to a beautiful ribbon.

This year, think outside the box and have fun.

Creating a Bedroom Sanctuary

Serene, calming, comfortable… these words probably describe your ideal bedroom. More than ever, we want our bedrooms to be a retreat. No wonder – with our crazy lifestyles and hectic schedules – who doesn’t want an oasis where they can relax and rejuvenate?

Whether you have a big bedroom or small, modern or contemporary, here are some suggestions to make it a sea of tranquility:

On the walls. The trend is toward muted colours – mauve and soft green are very popular. Pale blue, gray or ivory will work beautifully too. Think soothing. Many people go for a neutral palette with just a few touches of colour in accessories. Wallpaper is making a comeback too. It adds a feeling of warmth and intimacy to a bedroom.

On the floor. Hardwood flooring is always perfect, but in a bedroom, keep it cozy by adding rugs. Even something small creates a feeling of luxury.

If you have space, put in a sitting area and a TV if you choose. Consider it your “suite”… your getaway from the world.

Think eclectic. Don’t be afraid to mix styles, periods and textures. Add an antique desk to a modern room. Display some whimsical artwork. If you love it, include it. It’s YOUR space. If you’re on a tight budget, be creative. Sometimes an old piece of furniture can be painted or refinished to look AMAZING! Combine it with traditional furniture… mix it up!

Add Comfort, Colour and Style with Cushions!

Looking for an instant, inexpensive and interesting way to transform your living or family room? Bring on the pillows! Throw cushions or pillows can change the look of your room. They liven up any space and add depth and dimension – not to mention they feel great!

When you’re decorating with cushions, especially for the cooler months, think soft and cozy. With that as your mantra, there are a few important factors to consider when you’re shopping.

Colour

There are many ways to use cushions to enhance a room’s colour scheme. One approach is to use cushions in a solid colour. Try picking up on a complementary colour in the sofa, drapes or rug. For a soft look, use tones in similar colours to unify the room. Another suggestion is go for a punch of bright, contrasting colour.  If your living room is neutral, spice it up with bright cushions. You’ll be surprised how you can transform a beige sofa with violet or orange pillows. 

Hint: Add other accessories in the same vivid hues – art, candles, a rug, etc.

Pattern

Pattern incorporates colour in a more intricate way. There’s a myriad of patterns to choose from: stripes, florals, abstracts, polka dots…the list goes on and on. Don’t be afraid to mix patterns – the trick is to stay in the same colour palette so that the effect isn’t overwhelming and to know when to say “enough”. Work within 2 or 3 colours to play it safe, making your choices from your sofa and the other fabrics in the room.

It’s often a nice idea to include pillows with the same fabric as your drapes, for example, but don’t rely on this exclusively or you will have a predictable “matchy-matchy” look. Mix it up!

Hint: A throw on the corner of a sofa is a beautiful way to tie all your colours together.

Texture

A variety of textures is good, but best to stay in the same “family” of fabrics. If, for example, you have delicate silk pillows, a shaggy fur cushion may be overkill. But that same fur pillow will look great among heavier, more substantial fabrics like tweeds. You want to look for the same aesthetic in texture while still adding fun and dimension to the room.

Shape

Most pillows are squares and rectangles – which works well. But this is an ideal opportunity to think outside the “box”. Really oblong pillows can look great across the back of a sofa. Circles can be interesting too, especially if you have other circles in the room. A heart shaped pillow can be lovely – especially on a bed. Again, think balance and moderation!

Quantity

Some say, just like shoes, you can never have too many cushions! I’m not sure I agree, but certainly, don’t skimp on the number of pillows you add. Think generous, abundant, luxurious.

Here’s a tip for choosing the right number of solid coloured versus patterned pillows. For solid pillows, go with an even number – 2 or 4 for example. For patterned pillows, choose an odd number – 1 or 3. Nobody knows why this works, but it does.

Bedroom Pillows

These days, getting into bed takes some work! Everybody seems to be putting lots of decorative pillows on the bed and of course, they just don’t fit for sleeping! All the same colour and texture guidelines apply here as with the living room sofa.

To arrange the pillows for the right look, start with a couple of large pillows against the headboard.  These should be quite substantial. From there, add your actual bed pillows in front. Finally, add your decorative pillows. You can have a couple of layers of these in front of your regular pillows – including a neck roll or something special in embroidery or needlepoint, depending on your style.  

Now that you’ve added some amazing pillows, there’s just one more thing to do – grab a book or maybe a blanket – and have a nap. Happy snuggling!
